Crust for 4 dumplings:
Sift 1 1/2 cups flour with 3/4 teaspoon salt
Cut in 1/2 cup shortening
Gradually add 3 or 4 tablespoons cold milk
Toss lightly until ingredients are moistened. Chill.
Boil together about 3 minutes:
2/3 cup sugar
1 cup water
2 tablespoons butter
1/4 teaspoon cinnamon
Few drops red food coloring
Surprise fillings:
Brown sugar and nuts
Favorite jelly
Prepared mincemeat
Raisins and honey
Dates, nuts and honey
Brown sugar and coconut

1. Roll crust into 14-inch square. Cut into 4 (7-inch) squares. Place a peeled, cored, tart baking apple on each. Fill with ?surprise? fillings, sprinkle with sugar, dot with butter, fold up corners of crust over top of apple and pinch crust edges together.
2. Place dumplings in deep baking dish and add syrup. Bake at 400 degrees F for 40-45 minutes or until apple is tender. Serve warm with cream or ice cream.
