MINI CHEESE TOASTS

At fifties cocktail parties, martinis and other drinks flowed before dinner. To be successful, an appetizer had to be tasty and attractive, but also rich enough to balance the booze. These are cheesy and yummy.

1 egg
3/4 cup finely grated sharp chedder of Parmesan cheese
1 teaspoon Worcestershire sauce
1 teaspoon cream
salt and freshly ground black pepper
5 slices white or whole-wheat bread, crusts removed
Small pieces of ham, cooked bacon, pimiento, olives or capers

Preheat the broiler. Beat the egg in a medium bowl. Stir in the cheese. Worcestershire sauce, and cream. Season to taste. Use cookie cutters to cut the bread into decorative canape shapes-squares, triangles, or circles. Broil lightly on one side. Turn the toasts and place a spoonful of the cheese mixture in the middle of the untoasted side. Sprinkle with a topping, if you wish. Broil until golden brown. Serve hot.
